Quick freezer jam
I love fresh homemade jam, to be honest I am not much of a canner and it actually scares me a bit. It also seems when you are canned a lot of time is spent cooking down the recipe and then processing in finished jars. Maybe someday I will get over this fear and really can my own jam! For now I really love freezing recipes, especially freezer jam! I was at the store this week and they had a flat of strawberries for $7, I love it when I find great deals like this they were less that $1 a pound. I am sure we could have eaten all 8 pounds but, I decided I really wanted some fresh strawberry jam to have in the fridge and freezer. One of my favorite things about freezer jam is it only takes a few ingredients. I always purchase the freezer jam packets to keep it really simple.
To make your own freezer jam you will need 1 freezer jam pectin pouch, 4 pounds of fresh fruit, 1 1/2 cups of sugar. Instructions are to wash and mash 4 pounds of fruit. You know how I am all about simplifying things, instead of chopping and mashing all of those strawberries. I washed them cut the tops off and threw the 4 pounds of strawberries into my blender. I pulsed my blender a few times until the strawberries broke down into a mashed consistency. I added the 1 1/2 cups of sugar and the pectin pouched and pulsed the blender a few more times until it all became incorporated and the sugar and pectin were dissolved. I set out my 8 ounce plastic freezer jars and simply poured the fresh strawberry jam into them. It only took about 15 minutes to make 2 batches of this wonderful freezer jam. I am sure we will be eating jam everyday on anything we can find to put it on! What is one of your favorite things to put jam on?
- 4 pounds fresh fruit
- 1½ cups sugar
- 1 freezer jam pectin pouch
- Wash and mash 4 pounds of fruit. Add 1½ cups of sugar and the pectin pouched Stir until it all ingredients become incorporated and the sugar and pectin are dissolved. About 3 minutes. Pour into 8 ounce freezer safe containers.
