Start by placing 4 ounces of cream cheese into a medium-size bowl. add 1 Tablespoon milk and 1 Tablespoon sugar, then beat with a hand mixer until smooth. Zest 2 teaspoons of lemon peel and 1 Tablespoon of lemon juice to cream cheese mixture, add 1½ cups of whip topping then fold in with a rubber spatula. Spread the cream cheese mixture evenly over a prepared graham cracker crust. Slice 1 cup of fresh strawberries and press strawberry slices into the cream cheese layer.
Add 2 boxes vanilla pudding mix into a medium-size bowl, to the pudding mix add 1 teaspoon lemon extract and 2 cups of milk. Mix together with a hand mixer until pudding thickens, gently stir in 1 cup of whip topping. Spoon pudding mixture over the strawberry layer in crust. Spread remaining whip topping and garnish with strawberries and lemon slices. Refrigerate until ready to serve.
