Winter Ham and Potato Soup

This soup is perfect for a cold winters day!
Ingredients
  • 5 medium potatoes peeled and diced
  • ½ c. Onion diced
  • ½ c. Celery diced
  • ½ c. frozen or canned corn
  • 1 c. diced ham
  • 3 c. water
  • 5 chicken bullion cubes
  • 4 tbsp butter
  • 6 tbsp flour
  • 2½ c. milk
Instructions
  1. Combine the potatoes, ham, celery, onion, water, bullion cubes, and corn in a large soup pot. Simmer for 20 minutes or until vegetables and potatoes are soft (but not mushy)
  2. While ingredients are simmering in a seperate pan combine butter, flour & milk, Continually stirring until all flour lumps are dissolved and mixture is thick. It is important to continue to wisk/stir so the mixture does not stick to the bottom of the pan. Once thickened pour the mixture into the pot with all the other ingredients and stir!
  3. Add shredded cheese and salt and pepper to taste. Serve the soup while it is hot and cheese is melting!
  4. Hot rolls go well with this soup.
