Crock Pot Supper in a Dish
I don’t know about you but I’m a meat and potatoes kind of gal! I love a hearty filling meal with a lot of potatoes and meat. It’s even better when it’s all cooked in the crock pot! My sister gave me this recipe about 12 years ago. She had found it in one of those great cook books where everyone brings a recipe to work and they made a book out of the compiled recipes. We all know these are the best kind of recipes, tried and true probably someone’s grandmas secret concoction. This has been a favorite at our home I know I am a little off season posting it right now. But we have had some crazy weather in these parts and it was a perfect cool rainy day to make this. It’s one of those comfort foods that warms you up inside!
This recipe does take about 20 minutes to prep. First start browning your pound of hamburger and while the hamburger is cooking you can use a food process to speed up the chopping process. I use it to chop my onions, celery and potatoes. I don’t peel the skins off my potatoes for this recipe. I also buy the bags of baby carrots and throw them in the crock pot whole. After my hamburger is browned and all veggies are chopped. I layer them in the crock pot, starting with the hamburger on the bottom then potatoes.
Next up for layering is onions, carrots, peas and green peppers. Keep repeating the layers until you have used all your chopped veggies and meat. I did 3 layers of each vegetable.
Now mix the can of cream soup and milk together, then pour the mixture over top of the layers in the crock pot. As it cooks all day the soup and milk will melt down into the mixture of veggies and meat! Cook for 4 hours on high or 6-8 hours on low. Scoop into bowls, salt and pepper as desired then serve topped with cheese!

- 1 Lb ground beef, browned and drained
- 1½ C. raw potatoes, sliced
- 1 C. carrots, sliced
- ½ C. onion, chopped
- ½ C. celery, chopped
- ¼ C. green pepper, chopped
- 1 can cream of chicken or mushroom soup
- ¼ C. milk
- ⅔ Cheese, shredded
- Layer ground beef and vegetables in crock pot. Sprinkle with salt and pepper as desired. Combine soup and milk. Pour soup mixture over layered ingredients. Cover and cook on high for 4 hours or low for 6-8 hours. Top with cheese and serve hot!
