Chicken pesto pasta

A few years ago I ate a similar dish at an Italian restaurant.  I came home and tried to re-create the meal.  I think my version is pretty close.  I love that it comes together very quickly.  The sauce is so rich and creamy, the pesto in it gives it that extra flavor.  It’s a fast hot meal for a cool fall evening!

Ingredients
  • 4-6 Chicken breasts cubed and browned
  • 1 16oz bag stir fry vegetable mix
  • 1 16oz box bow tie pasta
  • 1 pkg dry pesto mix
  • 1 pkg cream cheese
  • ½ cup butter
  • 1 T. garlic
  • 2 C milk
  • 2 C parmesan cheese or Italian mix cheese
  • black pepper to taste
Instructions
  1. Bring a large pot of water to boil, cook pasta according to package. The last 2 minutes of cooking time add frozen stir fry vegetable mix to pasta. Drain water at end of cooing time. Add cooked cubed chicken. Pour pesto Alfredo sauce over and Mix to coat.

  3. Melt butter in a medium sauce pot. Add garlic and simmer for 1-2 minutes. Cube cream cheese add to butter, stir until combine and smooth. Slowly add in 2 cups of milk while mixing. Continue mixing and add 2 cups of Parmesan cheese. Dump dry pesto mix packet and incorporate into sauce. Sauce will turn green.
